Sophisticatedly sweet, these Le Creuset ramekins make darling presentation for individual chocolate mousse portions or crème brulee. They are also a charming way to dish up strawberries, nuts, or candies at showers and brunches. Designed to go from the freezer to the oven to the table, the pieces are crafted from Le Creuset's premium stoneware with enamel glazing. Their exteriors are rich, dark chestnut in color, and the contrasting interiors come in pastel hues of pink, blue, green, and purple. Heavy-duty in spite of their petite shaping, the ramekins distribute and retain heat excellently, and they are safe in both microwave and conventional oven. They also clean up easily, thanks to the enameling, and will not crack, craze, or scratch with normal use. Lovely ramekins, perfect single-serving size November 30, 2007

These ramekins are very nice looking and feel substantial. They are freezer, oven, microwave, and dishwasher-safe, which make them very convenient for a variety of uses. I think they're the perfect size for side dishes (individual green bean casseroles or au gratin potatoes!) or for a smaller serving of hot or cold dip for parties. They're also a nice size for single-serving fruit crisp. Here's a recipe:
Topping:
1/2 c all-purpose flour
1/2 c whole-wheat pastry flour (or omit and use 1 c all-purpose flour total)
1/2 c oatmeal
3/4 c brown sugar
1/2 c salted butter (1 stick)
1/2 c chopped nuts (optional)
Mix flours, oatmeal, and brown sugar in a bowl. Using your hands, rub butter into dry mixture until it is well combined and crumbly. Stir in nuts. Store in an airtight container or freezer-safe bag in 'fridge for up to 1 week or freezer for up to 2 months.
To make crisps, peel and slice thinly a fruit of your choice (apples, pears, peaches, plums, apricots, berries, or a mixture) to fill ramekins about 3/4 full. Sprinkle each with 1/2-1 t flour and sugar and dust with cinnamon if desired, then toss fruit to mix. Cover each with a handful of crisp topping and cook at 350 for 20 minutes or until fruit is bubbling and topping is browned (apples take longer, cover with foil if top is getting too brown). Let cool 10 minutes before serving with ice cream or whipped cream.

If you make dessert souffles (chocolate or jam-filled) these small heart shaped ramekins are just the thing to dress up your table. THey also hold cheese, dips or other small side dishes. The colors are very modern and interesting; if you know someone who has used deep brown and kiwi or aqua in their decor, this would make quite a housewarming gift. Or Valentine's day present.
